Cocktails from Stave: A Night in the Dark

The first weekend in December in Northern Kentucky means one thing, Dark Charge Block Party Weekend. This is the weekend that Braxton Brewing Co. celebrates Kentucky’s unbridled spirit with the pairing of bourbon and beer. The Dark Charge Barrel Aged Stout is a very limited release and was aged this year in New Riff bourbon barrels. 2023 saw the ninth year for the Winter Block Party and the first year for the exclusive Friday night event, Stave.  Each course in this dinner featured a dish from one of our amazing B-Line restaurants or bars, paired with one of Braxton’s Dark Charge variants, and a New Riff cocktail. Ever since that night our inboxes have been full letting us know how much you loved everything, but especially those cocktails. We’ve received a lot of requests for their recipes! We’re happy to present this list of cocktails from Stave to you so that you can make these special Stave cocktails at home.

Coppin’s New Riff Barrel-Aged Bramble

Glass: Rocks
Garnish: Lemon Twist and/or Fresh Blackberry
3/4 oz fresh lemon juice
3/4 oz vanilla demerara syrup (see end of article)
1 1/2 oz New Riff Bourbon Barrel-Aged Gin
1/4 oz Foro Amaro
1/4 oz Giffard’s Creme De Mure Blackberry Liqueur
Add all ingredients to a shaker except for the blackberry liqueur.
Add ice and shake until well chilled.
Strain into rocks glass and add fresh ice.
Slowly pour blackberry liqueur over top of the drink.
Garnish with lemon twist and/or fresh blackberry.

Smoke Justis Midnight

Glass: Coupe
Garnish: Luxardo Cherry
2 oz New Riff Rye
1 oz Amaro Foro
1 dash Angostura bitters
1 dash Orange bitters
In a mixing glass add rye and Amaro Foro.
Add ice and stir until chilled.
Strain into coupe glass.
Add bitters.
Finish drink by adding Luxardo cherry to glass.

Rich’s Proper Toasted Pecan Manhattan

Glass: Rocks
Garnish: Candied Pecan
2 oz pecan infused New Riff Rye
.5 oz Villon Cognac
.5 oz Foro Sweet Vermouth
2 dashes Bittercube Blackstrap bitters
2 dashes Woodford Chocolate bitters
Splash demerara syrup
Add all ingredients to a mixing glass.
Add ice and stir until well chilled.
Strain into rocks glass with fresh ice.
Garnish with a candied pecan.

Smoke Justis Noisette

Glass: Rocks
Garnish: Lemon Twist
1.5 oz New Riff Bottled in Bond
1 oz vanilla bean demerara syrup
1 oz Hazelnut liqueur (May we recommend Second Sight’s Queen Mab?)
.5 oz lemon juice
Combine all ingredients in a shaker.
Add ice and shake until well chilled.
Strain into rocks glass with fresh ice.
Express oils from lemon twist on top of drink, rub twist on rim of glass, and lastly garnish drink with the twist.

Bonus Recipe: Vanilla Bean Demerara Sugar Syrup courtesy of Smoke Justis. This will make a very heavy bodied syrup for your cocktails.
Vanilla Bean Demerara Syrup
5 vanilla beans, split and scraped
3c. demerara (raw) sugar
1c. water
Add water, sugar, vanilla seeds and pods to a pan. Bring to a low boil and stir until sugar is dissolved. Let stand until completely cool. Remove pods, bottle, and store tightly in the refrigerator for up to a month.
